I’ve never cooked with curry and am new at cooking with coconut so this recipe was a complete experiment! My husband said “this is the best chicken I’ve ever had” as he devoured it. I had to remind him to get a fork and eat like a civilized caveman.
1 whole chicken cut up
1 can of light coconut milk
1 T of curry
½ cup of almond meal
¾ cup of shredded unsweetened coconut
I will interject here that except for the chicken and coconut milk, everything else is my best estimate. I usually cook by site and not by measurement!
Place the chicken in a 9x14x2 baking dish. Sprinkle the almond meal over the chicken evenly. Over the almond meal, sprinkle the coconut. On top of this, sprinkle the curry. 1T might not be enough, it’s just my guess. Pour the coconut milk over the chicken gently. Bake uncovered at 350 until golden brown and done to perfection. The meat was falling off the bone when we took ours out of the oven. The juices kept everything moist and tender.
